THE INGREDIENTS FOR A TASTY MAURITIAN CURRY

– 150g boneless chicken
– 100g shrimp size 31/40
– 10g turmeric powder
– 15g curry powder
– 20g fresh coriander
– 1g black pepper
– 0,5g ground nutmeg
– 3g ginger and garlic paste
– Chilli
– 10g onions, chopped
– 5ml oil
– 2g curry leaves
– 2g thyme
– 20g fresh tomatoes
COOKING INSTRUCTIONS STEP BY STEP

Cut the chicken into pieces and leave it to marinate in the fridge with the turmeric powder, ginger and garlic paste, salt and pepper.
– In a saucepan, add some oil, chopped onions and the remaining ingredients, except tomatoes, and cook until golden brown.
– Add the chicken and stir well. Add some water or chicken stock and season to taste.
– When the chicken is nearly cooked, add the shrimps and tomatoes to the curry.
– Once everything is cooked through, add fresh coriander and serve hot with white rice or faratas (Indian flat wheat bread).
